I. Japanese-Style Pancit Canton Dish 

Recipe Title: Dashi-scented Pancit Canton with Seared Tuna Tataki and Nori-wasabi Mayonnaise 

No. of servings: 2 portions

Cooking time: 30 minutes 

Ingredients: 

150 g. Excellent Pancit Canton

450 ml Dashi StockD

60 ml Mirin

5 g Togarashi

30 g Kikkoman soy sauce

5 g Garlic, minced

5 g Onion leeks, chopped

1 ml Sesame oil

2.5 ml ponzu

100 g Fresh tuna

Tt Salt and pepper

60 g Japanese mayonnaise

2.5 g Wasabi

20 g Nori

Garnish:

Gari, edamame, shizo leaves

Procedure: 

1. In a pot, mix dashi stock, Kikkoman, ginger, onion leeks, mirin and togarashi.

2. Bring to a boil, strain.

3. Blanch pancit canton noodles until al dente.

4. Season with salt and pepper.

5. For the tuna, season with salt and pepper.

6. Sear on all sides until medium rare.

7. Slice thinly.

8. For the nori-wasabi mayonnaise, mix the powdered nori, wasabi and mayonnaise.

II. New Pancit Canton Variant 

Recipe Title: Pancit Canton Tri-Colore 

Portion Size: 300 grams

Ingredients: 

White egg noodles: 1 pc. Egg 

120 g AP flour 

2 g salt 

Green egg noodles: 1 pc Egg 

120 g AP flour

80 g malunggay leaves

80 g kangkong leaves

2 g salt

Orange egg noodles: 1 pc Egg 

120 g AP flour 

80 g carrots 

2 g salt 

Procedure: 

White egg noodles: 

Put flour in a bowl. 

Make well in the center, add egg and salt. 

Gently incorporate the eggs into the flour. 

Knead for about 10 minutes or until smooth. Rest for 30 minutes. 

Roll in pasta press. Cut into spaghetti shapes. 

Green egg noodles: 

Blanch the malunggay and kangkong leaves in boiling water. 

Squeeze out water and puree’. 

In a mixing bowl, put flour. 

Make well in the center, add egg, malunggay puree and salt. 

Knead for about 10 minutes or until smooth. Rest for 30 minutes. 

Roll in pasta press. Cut into spaghetti shapes. 

Orange egg noodles: 

Boil carrots in water. 

Strain and puree’ until smooth. 

In a mixing bowl, put flour. 

Make well in the center, add egg, carrot puree and salt. 

Knead for about 10 minutes or until smooth. Rest for 30 minutes. 

Roll in pasta press. Cut into spaghetti shapes.
