Global Academy is currently offering one-of-a-kind cooking classes for both seasoned professionals and hard-core hobbyists alike through its advanced culinary science department called The Epicurean Lab.

Combining contemporary, cutting edge practices from the world of “molecular gastronomy” with a healthy respect for classical techniques and tradition, the following courses are simply on a class of its own as participants learn in an environment of unparalleled curiosity, creativity and innovation not found anywhere else in the country.

SUPERIOR ONE CUISINE (diploma) This 3-month program contains some of the most advanced theories and techniques in the world of professional cooking packaged in classes for practical utilization in the workplace. The Superior One Diploma is available to culinary graduates from accredited culinary schools around the world or professionals with at least 3 years of top tier industry experience.

Module 1: Modern Gastronomy: Ethics & Applications: This course will teach you what it truly means to be a world class chef. You will learn about modern history and about the worlds greatest (and living) chefs. What makes them so good, what they are doing and how they cook… we also teach you to cook like them through Sous vide, Liquid Nitrogen, Hydrocolloids, Dehydration and more…

Module 2: Progressive & Traditional: Breakfast & American Cuisine

Module 3: Progressive & Traditional: Asian Cuisine

Module 4: Progressive & Traditional: European Cuisine

Module 2, 3 & 4: International cuisine done in both Traditional and Contemporary ways. This course will teach you about International Cuisines much like any other school as it covers tradition, culture and staple recipes. It is the only international course however to also provide side-by-side comparisons using modern gastronomy techniques in order to achieve better results as compared to the classical process… again something like this you wont find anywhere else in the country!

Module 5:Contemporary Cold Section: Garde Manger, Charcuterie & Pastry–Buffet Set up involves advanced garde manger, charcuterie, sushi making and preparing foods for specific diets.

Module 6: Professional Banquet & Line Cooking Production–Did you enjoy restaurant week/simulation? Module six teaches you “Professional Line Cooking” where your team and even you alone will be responsible for cooking for hundreds of people in a span of 2 weeks. This is restaurant week/simulation on over drive and you will now be cooking using the most advanced technological equipment present in one single kitchen in the country!

REQUIREMENTS
Postgraduate course for Global Academy alumni:

  • Must be a graduate of Grand Diploma course of Global Academy.
  • Alumni must secure a clearance from the Registrar for verification.
  • Health Clearance c/o Healthway
  • Birth Certificate (NSO Copy)
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
Postgraduate course for Non Global Academy alumni:
  • Must be a graduate of any equivalent professional culinary and baking course of Global Academy.
  • Non-alumni will be subject to an assessment of course credentials before admission
  • Birth Certificate (NSO Copy)
  • Transcript of Records and Diploma from previous Culinary School/Institution
  • Health Clearance c/o Healthway
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
For Practicing Chefs/Cooks
  • Should have practiced at least 3 continuous years from a hotel, fine dining restaurant or professional catering services. Employment Certificate is required.
  • Birth Certificate (NSO Copy)
  • Transcript of Records or Form 137 from previous school
  • Health Clearance c/o Healthway
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
