International Cuisine by The Epicurean Lab of Global Academy

Global Academy is currently offering one-of-a-kind cooking classes for both seasoned professionals and hard-core hobbyists alike through its advanced culinary science department called The Epicurean Lab.

Combining contemporary, cutting edge practices from the world of “molecular gastronomy” with a healthy respect for classical techniques and tradition, the following courses are simply on a class of its own as participants learn in an environment of unparalleled curiosity, creativity and innovation not found anywhere else in the country.

INTERNATIONAL CUISINE (major)

The Major in International Cuisine is a 5-week program for culinary professionals covering all of the worlds major cuisines in theoretical and hands-on training. The class is once again made unique with the injection of progressive gastronomy techniques in order for students to witness first hand the benefits of new-school science to classical old-school dishes.

International cuisine done in both Traditional and Contemporary ways. This course will teach you about International Cuisines much like any other school as it covers tradition, culture and staple recipes. It is the only international course however to also provide side-by-side comparisons using modern gastronomy techniques in order to achieve better results as compared to the classical process… again something like this you wont find anywhere else in the country!

Week 1: Asian 1 (Singapore, Thailand, Korea, Japan)

Week2: Asian 2 (Vietnamese, Indian, China 1, China 2)

Week 3: American (North East, Midwest, South West, Californian / Western)

Week 4: European 1 (Greece, Central Europe, Spanish, Italian)

Week 5: European 2 (French 1, French 2, French 3, International Buffet)

REQUIREMENTS

Postgraduate course for Global Academy Alumni:

  • Must be a graduate of Grand Diploma or DPCA course of Global Academy.
  • Alumni must secure a clearance from the Registrar for verification.
  • Health Clearance c/o Healthway
  • Birth Certificate (NSO Copy)
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
Postgraduate course for Non Global Academy Alumni:
  • Must be a graduate of any equivalent professional culinary course of Global Academy.
  • Non-alumni will be subject to an assessment of course credentials before admission
  • Birth Certificate (NSO Copy)
  • Transcript of Records and Diploma from previous Culinary School/Institution
  • Health Clearance c/o Healthway
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
For Practicing Chefs/Cooks
  • Should have practiced at least 3 continuous years from a hotel, fine dining restaurant or professional catering services. Employment Certificate is required.
  • Birth Certificate (NSO Copy)
  • Transcript of Records or Form 137 from previous school
  • Health Clearance c/o Healthway
  • Accomplished Application Form
  • Interview from EL’s Executive Chef or Chef Instructors
